What was so wrong with using a mannequin, then if it goes wrong it's not someone getting rushed to A&E after being stabbed.

Security and I apprehend shoplifters and just got a job where I'm going to apprehend probably three or four times as many as before.
My friend at Macy's got stabbed this Christmas but he had a vest so it wasn't bad. This is his second time getting stabbed, first time was without a vest. My old boss got stabbed with keys and they nearly killed him and my old supervisor who used to work the same job that I just got had knives pulled on him like four times.
Lots of drug addicts and that sort of thing and there is a guy who is doing a group buy for vests so I can get one cheap.

Chainmail is your best option clearly. There are chain mail shirts that can stop shark bites, so surly there is one that will stop knife attacks, with just a bit of padding underneath.
This vest also seems to have quite a few design flaws if stabbing up slightly defeated the whole vest. Not much of a stab vest if you have to hit the right spot.

there's a lot of "spot that stops stabs" that you wouldn't have otherwise. Same for bulletproof. Plus, idiots pulling weapons probably aren't too aware of the situation and would stab at someone's midsection anyways, who's to say it's not just a utility vest for sake of carrying security things
also stab-proof turtleneck doesn't sound like it'll catch on

Chainmail, while being more protective than modern fabrics against knife wounds, is also heavy as fuck and expensive to make. I've worn some before, shit weighs ~40 lbs and feels like it.

I own a chainmail shirt and when I was selling/trading blades at a medieval thing I offered to let people stab me. It's a thick-ass galvanized steel shirt that probably weighs 40-ish lbs, but it's definitely durable, as none of them could stab through my armor. I also offered that, with every trade and purchase you could attempt to stab me, which helped move product. :v:

Yeah, when I wore some chainmail at a renaissance fair right after I put the vest on the guy demonstrated how effective it is by pulling a knife out and stabbing me in the gut. Right afterwards he pointed out that there was a hole in the vest from a popped ring about 2 inches from where he stabbed me.

I gotta wear it under my clothes. I'm plain clothes at work now so I don't want anyone to know I have it and the one I'm getting doesn't have pouches on it. It's just the vest part.
Box cutters are the most common item I take off lifters. I figure it should be okay taking a slash from one.
