I told him I could do it for him and he was so angry that he couldn't do it and he was new to GMod he snapped and started calling me shit - so I went and called him all this and laughed at him for talking back and trying to think rational thought, I eventually apologised and he did to me and I went round 'roleplaying' with him.

What's the point of Garry's Mod RP? It's like that Jail game mode in counter strike. The fuck is the point? Is it for bullied children that want to exercise power over people or something?

Back when I had my own RP server we used DarkRP, merely for some of the mechanics it had (like inventory kind of things), but the actual RP played out more like a D&D campaign with a DM (Admin) flying around the map cloaked and setting up scenarios and locations for the players as they proceeded through the story, and then reacting dynamically (to the limitations of the resources we had) to their actions. It was very rare for us to ever have the Player Vs. Player mind set so much of Gmod is riddled with -- focusing instead on story and group efforts toward that. I loaded up over 16GB worth of mods on my server and then again in maps for the sake of roleplaying flexibility. Ended up having our own little virtual RP sandbox towards the end days (which often resulted in server crashes with all the scripts running unfortunately) which took us from horror based RP in Silent Hill, to alien conquests in csc_desert, to full-scale Spacebuild Space Operas with but the change of a map. The idea of using the server, gamemodes, and Gmod as a whole to play Cops N' Robbers, or a shitty version of The Sims never entered our minds -- it was seen as a waste of the resources we had. The overwhelming majority of server owners (all that I have ever seen, to date actually) just don't have the talent, vision, or drive to take RP in Gmod past the stereotypical tropes, and want the gamemode to do all the roleplaying for them (and then some servers forget they're in a game entirely and try to do everything with /me, completely negating the purpose of roleplaying in a [I]video game[/I]) -- that and they want to be the next Taco and rake in the cash and fame. RP in Gmod is a sadly missed opportunity that the community was never capable of realizing.
Seems like it's only kids and greifers who play Dark RP

RP degraded into basically what could be considered a franchise in gmod, like basically everything in gmod actually. role-play is just gmod slang for 'GTA in gmod with tiny maps, little content, and nothing to actually do'

The bare-bones stuff like DarkRP just doesn't have enough going for it on its own to be interesting. If you want a good server, you have to break the mold using the tools available to you, and put in actual effort, instead of just slapping on DarkRP and saying it's done. Man, I wish I could have played on that server you had. It sounds like it was fucking amazing.
It was fun while it lasted but looking back I can see all the problems. It has the potential to be done well but that hasn't happened yet to my knowledge.

DarkRP is fun only if you don't take it seriously. Whenever me and some friends go on darkRP we just dick around and usually end up having fun. One time we went on and for some reason set up a shop and filled it with globes, we then changed their materials and sold them as "luxury globes". Due to our skill as salesmen we made a shit ton of money because admins kept on buying them for thousands. We then used our globe money to buy guns and fund a war. Another time we were just homeless people and set up a house in the streets, before long we had a following of a few people who did our bidding and even some cops who pretty much worked for us, we were like some corrupt hobo mafia. I also once picked up a lamp prop and carried it around, not sure how but I managed to make everybody want this lamp. Before long people were trying to steal it and even murdering each other just to get this lamp.
