Depends on how fast the brain ceases activity, usually a bullet to the brain causes the person to die near instantly due to shock and damage to brain tissue, or at least pass out until death a few moments later. Be-heading just cuts off the blood supply and allows blood to drain from the head, essentially it is like choking the person to death, but faster and the shock of it happening could cause the person to pass out at least. In some cases, since the brain is still intact it can remain active for a matter of minutes. To be honest, I'd rate them about the same, though beheading is probably more gruesome.

I saw some fucked up video where this asshole taliban beheaded an us soldier, his head took more than 4 slices to be completely cut which lets me think that firing squad is alot more gruesome and hurts less.
Real beheadings with a sword or ax are usually very gruesome and takes more than one hit to decapitate, unlike the movies where every villain is an expert beheader and can take a head off with one swing of any weapon.

There's no evidence that the brain is alive for any period of time past the beheading.

Beheading is painless if done with a guillotine. Being shot at and hoping they don't decidedly miss your heart is worse.. if I was going to be executed I'd want a guillotine.

It doesn't matter to the dying person whether they die of bullet or a sharp instrument to the neck. The death comes in a few seconds regardless of the method. However a firing squad is much more easier and humane for the executioners. The squad shares the blame for the executed's death, and no one can tell whose was the killing shot. Instead of one person having to deal with hacking through a person's neck with a blade.

Skilled UFC fighters can choke out other people in seconds by cutting their blow flow. A beheading is the same but on steroids and much more complete, everything's permanently severed.

Would that not be humane, I know its messy but wouldn't that ensure instant death?

Even a few grams would be lethal if detonated against your head.
If they're going to do executions they should at least do it right; with nitrogen asphyxiation.
