I like the Norwegian take on schäfer best, personally. Because it's pronounced like the Norwegian word "sjef" which means "boss".
So schæfer is a boss dog.

Basically in WWI everyone hated Germans, so they had to come up with a new name for the breed.
Now German Shepard has been making a comeback, and in some countries (like the US), Alsatian never gained much ground in the first place.
