So their legs had the right feathers to allow them to function as wings? That's kinda neat, even though a bird with six limbs woulda been pretty gnarly.

Aye; a gryphon would be better eatin' in that regard, especially since wings are usually mostly skin because of membranes. Moreso in winged mammals and reptiles than birds, since birds rely more on feathers to fly than the bone-supported membranes that things like bats and pterosaurs have.
Also, even though breast probably houses the most muscle meat in the bird, I still prefer leg meat; I dunno why, maybe leg meat is less likely to be stringy than breast, since it's smaller? I dunno; I'm not a muscle expert, but then again who is in this place? But I do know that it's best to have the animal calm before a quick and instant slaughter, since stress can apparently make the meat stringier. So the leg of a gently-slaughtered chicken sounds better than the breast of a stressed chicken, although I'd imagine it'd be harder to ensure a chicken is destressed before slaughter because of the whole thing where they run around headless for a while.
I prefer wings to legs but you need more since there is so little on them.
