Is a u really going to change the pronunciation that much? The spelling doesn't really matter when going from a language that uses a different alphabet.

I would disagree, there is a big difference, much greater than some of the sounds in English. Take the different s sounds English words end with. It also changes the meaning a lot. chinko = penis, chinkou = to sink/submerge.
