Where online would you but guitar parts for an metric Epiphone Les Paul, I need to order an output jack, switch, and maybe some caps.

Either way, try and get a Switchcraft jack.
If by "caps" you mean Capacitors, Mylar ones work well, as do Orange Drop ones. Avoid ceramics.

Personally I wouldn't limit yourself to just those parts, especially for the jack.

Switch: Unsure on this one. I would probably get a replacement gibson/epiphone one from the company themselves.
