I'm not sure if I'm missing the point or not but many of those points are one-time, in-mission only activities as far as I know. This video makes rappelling down the side of a skyscraper sound like something you can just decide to do one day, but as far as I know you only really do that on one particular mission. But hey, there [I]is[/I] a fuck ton of things to do in GTA V after all.

Think vacation not game features kind of deal.
"Many nightclubs and bars" There's 1 strip club and that's it.
