How do they not shatter into a million tiny pieces when they hit the trees like that?

Fall from ~15 feet up, no problem. (ahem learning how to fly). It's got an ABS plastic 'fairing' and a metal frame, so it's stronger than you think. I would imagine those are built to similar or more rigorous specs

Or just a titanium frame.

Out of curiosity is there any legal issues flying these high above a city or public area just to see the view?

I have a drone, not a race one but one that is made to fly about 10-15km. Heres one of the video i made with my old video transmitter, testing autopilot. My main goal is to go above the cloud.

If your control or video link are over certain bandwidths, you're also supposed to have a HAM radio license and periodically broadcast your license handle. Nobody ever listens to that shit though. These mini-quads are pretty durable, but I guarantee they either use carbon fiber/glass props or carry a ton of spares because standard plastic props break if you look at them funny. LiPo batteries will also combust if damaged enough or punctured so it'd be interesting to see what'd happen if a branch happened to puncture one during a race.

All I know is if you set your radio to the same frequency as someone else who's flying, you'll get the shit beat out of you, in radio control airplane meetups I'm slightly exaggerating but you will more than likely be forced out and to never be allowed back if you did it on purpose

Flying is lax in the US a bit. You can R/C all you want pretty much in most areas. Hell you can even land and take off a float plane under power lines in a river at your leisure here, if it's uncontrolled airspace, and only need to maintain basic radio coms with other traffic in the area. No flightplan needed. Nevermind all that bullshit in Canada with needing a license and weeks advance notice about your flight plan for a stupid drone
I'd strap an accelerometer & gyro on that, and build an accompanying motion simulator seat to experience that.
I envision drone racing leagues popping up everywhere. This would be so amazing
