I noticed both photos they used have very flat skylines, i'm wondering how it would go with a nature picture with lots of trees and bushy grass

Well it's automated and they'd want to show it off at it's best so probably not very well. It might be decent, but I can't imagine it working anywhere as well as it did in these examples. At its core it's probably just using color/hue/contrast/edges/etc to determine the sky. It's a nice addition to photoshop and it's presumably optimized specifically for skies, but it's most likely based on methods that have been used for a while to quickly replace skies dynamically in video compositing and the such
I saw a similar technology ages ago in a computer vision lecture video. If someone can find it, please post it.
