I am pretty sure you pay for the time they put into creating new flavors. It's costly to keep changing it.
You pay more because Ben and Jerry's ice cream uses like 5x the flavoring than normal ice cream, and they use milk from their own state. It's in their documentary.
Ben and Jerry's is the best ice cream I've ever tasted. I almost lived on it the first time I visited NY.
