Well, the three major abrahamic monotheistic religions all have different views on Jesus. Christianity says Jesus was the son of God, Islam says Jesus was a messenger of God, and Judaism says Jesus was a carpenter who got executed.

Being jewish (besides the fact that most people use it as an ethnic term rather than a religious identity) doesn't just mean you believe Jesus was a believer of Judaism. You also have to believe that he wasn't a prophet at all but instead a false messiah.

Because an overwhelming majority of Christians are descended from converts. Conversion is considered a legitimate way of becoming Christian, but it is not considered a legitimate way of becoming Jewish.
At best most Christians can fit the description of a Jewish heretic, which is not a particularly pleasant-sounding term.
