I don’t know how Singapore does it but here in NYC street food generally means either chicken over rice halal food, overcooked pretzels, six-dollar hot dogs that have been sitting in the same water for a week, or burnt roasted nuts. It most certainly does not mean something that’s going to do anything else than satiate you, but apparently on the other side of the world things are much different.

Lmao. I think the Michelin is overrated. Most of the local cooks and chefs know that the Michelin guide is just a bias, bullshit guide.
Especially how most of the locals were complaining, when the Bib Gourmand results got released, all the touristy food hawker outlets were listed, which didn't really represent what we eat on a day to day life. And immediately, there was a hour long queue outside Tian Tian Hainanese Chicken Rice.
Plus, who are you kidding, Joël Robuchon, the only one gets 3 Michelin stars in the whole country? The guy with one of the most Michelin Stars in his career? Colour me fucking surprised.
Oh, and they were sponsored by the Singapore Tourism Board, and the Resorts World Sentosa, which so FUCKING COINCIDENTALLY happen to be the restaurant of Joël Robuchon

It depends on the land lords (who are massive cunts I must add)
Everytime the outlet gets a review, they up the rent so much that even popular places are forced to closed down and move elsewhere.
That's the current food scene in Singapore, and sadly the Michelin guide is not a good representation of the Hawker food culture. The restaurant and cafe have now gone to catering what's trendy, rather than what's good. Everyone is doing cafe styled food, because its the 'in' thing now in this country.
Also, Burnt Ends, which is fucking amazing, didn't even get a mention.

hawkers probably have it easier if they ever lose one because their customer base won't give a shit
i'm sure it'll lead to some very annoying tourists for a while though

That's because a self respecting Hawker could barely give a shit about getting Michelin Stars.
Its a foreign concept to Hawker aunties and uncles, they are middle aged to old aged ladies and men. Michelin stars are a foreign concept to most of them.
A good Hawker can sell out (if we are talking breakfast) all their dishes in 3 hours or less. And then they have the whole day free.
And they can earn 5k or more in a day. Depending on how much they sell.

Because it is a legitimate thing that happens to chefs awarded with Michelin stars...
Thankfully it looks like he's just proud to have gotten the award and the threat of losing a star probably isn't that much of a deal that he'll get overstressed from it

The restaurant stars are only part of the Michelin guides, they're full of maps, lists of hotels, petrol stations and restaurants to visit while driving, instructions on changing your tires, etc. It's all to encourage and help people travel so their car's tires wear down more and they can sell more tires.

It isn't when you think about it. The tire people drove around a lot and they gave restaurant guides to people that drove around a lot as well.
