I would be more impressed if he actually tried to make up a design from scratch instead of just copying someone else. It just looks like a re-skin to be honest.

How accurate is this dudes forging process to medieval times? Like could you arm someone with a sword made using his techniques and have it be roughly equal to a real sword? Obviously stuff like this is designed to look pretty over function, but if he used the same techniques with function in mind, would it work?

He's using good quality modern steel, the metal quality would easily be as good as, if not slightly better than the finest medieval stuff. (though we have to remember the medieval period covers a lot of time)
The guy knows what he's doing and the thing would function as a weapon. Of course being fantasy based, it's just a generic shortsword, and there are more optimal designs for them, depending on what exactly you want (a kukri like chopper, or more of a piercer like a gladius?) but what you're looking at would be pretty effective.
I'd love to see him do something totally balls out insane like Frostmourne.

Well in Man at Arms, he's making swords and weapons from films, games, cartoon and etc... so the effectiveness of the weapons you see would vary. But Sting should be just as functional as a 'medieval sword'. More so because the leaf-blade design is legitimate and it's not just a fancy fantasy look.

Peter Lyon (sword smith for the Lord of the Ring films) talks about what historical weapons (at the royal armouries) he was inspired from. As you could see, Sting's blade looks identical to that bronze age blade.
