not necessarily! just because the skin's brown doesn't mean the inner meat hasn't been cooked through. and eating undercooked chicken is never a guarantee that you'll get sick, it just vastly increases the likelihood of it

If you're not totally sure just cut it open and have a look because if you're serving for yourself it doesn't really matter about presentation. Alternatively you can weight the meat and use math to estimate cooking times or poke it with a cooking thermometer to see if its cooked in the middle.

I think cooking in general is quite relaxing and therapeutic. Also I like the look of that dish, I'm really starting to get interested in Nordic food. Well, for dinner tonight, I stripped the remaining meat off of a roasting fowl and put it into a cheese-and-onion sandwich, then popped it in the oven. Did a similar thing to make a burger, which technically is a patty melt because I used bread instead of a roll or bun. For the greens (and technically dessert) I have a large sweet and crunchy carrot; quite the complement to an otherwise rather meaty and carby meal. Not exactly the healthiest start to a month of being home alone, but it'll suffice for tonight. I'd post pics, but I don't have anything on hand that would allow me to take a picture and upload it to my machine.
Well, I've been getting into preparing rice dishes lately and yesterday I decided to make some simple rice pudding. 1/2 cup jasmine rice, water, milk, butter, sugar, some dashes of cinnamon and honey, raisins, and a lot of nutmeg. It came out pretty well, though it took well over two hours to cook. I don't know if that is normal with sweet dishes, but everything that I have done with rice prior only took a few minutes maximum to cook. Might just be me. I would post pics, but in its current state, it doesn't look all that appealing, more of a rice brown sugar mush in a bowl in the fridge. Also, off topic but I would like to hear your advice. A 'special' friend of mine may be over this weekend and in a relatively subtle attempt to impress, any ideas for a relatively simple dish that is very good? Lately I find myself limited to working with rice as it is cheap and fried rice and chicken is a simple quick dish to make. However, that isn't the most creative nor the most tasty, but works for me. Any recommendations? I am not afraid to get my hands dirty or even get complex, but just like my forays into baking, things that are super easy to screw up don't always turn out as planned.
