It'd be interesting if they did leave because they wouldn't automatically be members of the EU upon leaving and countries like Spain have their own separatists that they don't want to encourage. This would be tugging against the desire to not have countries leave the EU though. On top of that if Scotland were to join it would probably have to introduce their own austerity in order to meet the GDP:debt ratios required by the EU for the Euro zone depending on what they would negotiate with the UK.
