Basically faces being on thumbnails increases the chance that someone will watch the video. At least that's how I've been told it works. And because some people aren't so much into putting a cropped out photo of their own face - they have a drawing done.
It'll often be part of branding as well, certain pictures mean instant recognisability of a video being from a certain YouTuber. Someone will see the picture and instantly know who it is if they've watched them before.
In the end, it's just the nature of the beast. I prefer drawings to photos of someone screaming or pulling a silly face anyway.
Plus it allows youtubers to sort of "sponsor" artists.
And that's always a good thing.
