The answer is simple.
He traveled to an ostrich farm, and bought fake ostrich eggs and planted them out there so we he could pretend to eat fake ostrich eggs for youtube money because just eating the eggs wouldn't have been much cheaper and simpler.

It's not all too uncommon for birds to lay unfertilised eggs (remember that's what chickens do all the time), and often birds don't know if the eggs are indeed fertilised or not, hence they would still be protective of the eggs.
Ostriches are genuinely scary they have 2 little daggers hidden and massive claws.
anshu is a fucking badass. i bet he wrestles his ostriches in his spare time, when he's not fighting bears and punching wildfires until they go out.
