As with any rhythm game you are building up muscle memory over time and get the ability to "read" songs.
You actually never memorize a song fully, at most difficult parts but the rest really is just muscle memory.
In a lot of rhythm games most parts of a beatmap consist of more or less the same parts and repeats, its not as random as things look.

Worth noting as well that it applies to real music, too. If you're good enough at an instrument and reading music, you can sight-read a piece having never seen it before.

The challenge with stock kits isn't the difficulty of the chart, it's the fact that the stock kits are notoriously bad for dropped hits, double hits, phantom hits, you name it and stock kits do it.

They are, he's just put foam over the pads to increase stick bounce. The kit itself is still the stock kit, whether or not you put foam over the pads

unless i'm mistaken about how this game is played, there's a big difference between pressing buttons and physically hitting a drum kit with sticks
i mean, might as well just post pro keys charts from RB and say "these are harder" then
the other shit that people posted later does look really fucking hard though
anyway as far as RB charts go, there's been other stuff on the game (and also in custom songs) that's a lot harder than the songs in the OP, but the fact that it's done on a stock kit is impressive

There's shitloads of things available on the store for RB and GH now. Along with custom tracks in some of the titles I believe. Songs you'd never see in the main setlist because they're too obscure.
And yeah, people mod the hardware all the time. The original drum kits had an issue with the pedal snapping, so people milled aluminium ones and replaced the switch mechanisms. The pads were notorious for missing a hit or falsifying hits on rapid inputs, so people investigated why the fuck they were so terrible and fixed them.
You're likely never going to suffer problems using a stock kit on most songs, it's just these really fucking stupid hard ones on the highest difficulty have killed hardware before from people playing like madmen.

The actual death waltz sounds nothing like it, it's more of a stage play than a song, no idea why people started calling UN owen was her, death waltz, I guess it started by them having the same title of being unplayable by human hands by people who play those beat games.

it's only RB now actually, Activision took down all the GH dlc from the store a couple years ago
also in addition to modding the stock kit, a lot of high-level RB drummers play with an actual electronic drum kit instead

Bummer. The RB store always seemed better as it was fairly compatible with every title (I think? I remember it since RB2 at least having some compatibility with later games). But that does kinda kill some of the later GH games.
