The gore can be disabled via Multiplayer. The bodies don't disappear with that option as well.

Australian government made a new rating, which allowed Valve to uncensor the game. Until Germany does something along those lines, don't count on it.

Contact Valve support, I gave L4D2 uncensored to my friend living in Australia and Valve was able to remove L4D2 from his account so I could gift it to him (I don't think he mentioned that I was going to gift him the normal version though).

Go to the store page for Left 4 Dead 2, scroll down to downloadable content and click "Left 4 Dead - Uncensored". Then you just have to click download.

Uh yeah that would have been an alright idea like 4 years ago but it's kind of pointless advice now.
If you downloaded L4D2 when it was free for a day it came uncensored in Australia, if you already had it you could get it uncensored too
Finally.
Well, Valve are censoring their games for a while now. Even god damn Portal 2 was censored. When you set turrets in flames with a laser, they normally scream, in the german version they just explode without doing anything.
