Well as the title suggests I have noticed a few key differences in the ways that men and women act in regards to who they like.
note: I am mostly speaking of teenagers in high school years. Women tend to change their dating style as they become more mature(i.e. in their twenties)
When it comes to dating, these are the differences I have noticed.
Women tend to like people they don't know well/have just met/don't actually know at all.
I hear this all the time from my lady friends. Talking about some random guy "oh he is so cute I really want to date him".
One girl I knew liked a 20 year old that she had seen working at Hot Topic only twice in her life! And she had a crush on him!
I hear similar stories from other girls.
Men on the other hand, I have noticed tend to have crushes girls after having known them for quite some time. This comes from personal experience as I only tend to want to date a girl after I have gotten to know them after a good amount of time has passed. And I see this happening a lot with other guys.
This is the reason why you always hear men tell stories of how they fell in love with their best friend.
And the worst part is, that you always hear about how men are the ones who are shallow and only like women because of their looks, but sometimes women are even worse!

You can't base an assumption of an entire gender on personal experience, either. It just doesn't work like that.
It sounds like you're just whining about how you hate girls because they're shallow, etc. I'm sure it's just a phase, it'll pass.
I do know some girls like what you describe in the OP but doesn't mean they are all like that.
I never fancied people I didn't know on anything other than a "sure he's attractive" level. Even now, I tend to fall for guys after I've been talking to them for a little while. I guess it's kind of a defense thing really, I don't let myself till I know the guy is somewhat interested in me too.
(not that I go out with any guy who is interested).
Girls always say they have a crush on someone, even if they wouldn't ever talk to them.
Men is exactly the same. When I'm at the bar, I can spit out a comment about some girl being cute, but that doesn't mean I wouldn't ever go talk to her.
