Seeing as insect surgery would be anything but easy or cheap, I'd imagine he just understands their behaviour enough to know they wont frenzy on him and murder him.
For me these things sting me if I just get within a meter of them

He just... grabbed them. It takes balls of steel to just grab a pile of wasps, and then continue to play with them on your fingers.

They're called drones. Their only purpose is to mate with the queen. They're highly protected within the nest, but they are also discared/killed when they're of no use.
You can tell they're drones because of their less-vibrant colours and that they're also bigger than the normal paper-wasp you see. In fact, they're so much bigger that they actually get assistance by females when they're ready to leave their comb. Females on the other hand are left to fend for themselves.
PS. as stated above, drones do not have stingers.

I really hate bugs in general, but wasps don't really gross me out that much, they look pretty cool imo.

When people harvest bee nests they usually spray them with a chemical that relaxes them, maybe they did this prior to the video.

I fucking hate wasps, I'm allergic to stings which may be also the reason why I'm so profusely terrified of them.
