I have a blind dog that will occasionally just plow headfirst into counters or doors full steam, and not even give two fucks. Dogs are tough.

The dog isn't trying to get on the counter, he is checking the status of his dinner. Italian Grey Hounds are very energetic and often have problems controlling excitement.
Fun fact, it's not trying to get to the counter, it wants to see what's going on up on the table.

Seriously though, that's not good behavior, you should train him to chill it
He's obviously leveling his jump ability, if he keeps doing this everyday he'll be able to jump to the ceiling at the end of the year.
