And it's not at all difficult to get DoF when you have an interchangeable lens system.

Isn't that just related to aperature though? You can get a very shallow DoF on even some of the worst DSLRs

Depth of field is a relation to aperture, focal length and focus distance. They literally could have just used a longer focal length and moved the camera farther and it would add more bokeh.
