The snake was being diced up to be made into snake soup, which is a delicacy in Guangdong and a much sought after dish in the province's high-end restaurants.
Restaurant guest Lin Sun, 44, who was in the restaurant with his wife Su at the time said: "We were in the restaurant having a meal for my wife's birthday when suddenly there was a lot of commotion.
"We did not know what was happening but could hear screams coming from the kitchen.
"There were calls for a doctor in the restaurant but unfortunately by the time medical assistance arrived the man had already died.
"After we heard that we did not continue with our meal."
Police say Peng died before he could be given life saving anti-venom in hospital. Victims of the Indochinese spitting cobra generally asphyxiate after the neurotoxin paralyses their respiratory system.
A police spokesman said: "It is a highly unusual case but it appears to be just an accident. The man had a very severe reaction to the bite.
"There was nothing that could be done to save the man. Only the anti-venom could have helped but this was not given in time.
"He prepared the snake himself and was just unlucky. It was just a tragic accident."
Snake expert Yang Hong-chang - who has spent 40 years studying cobras - says all reptiles can function for up to an hour after losing body parts, or even their entire body.
"It is perfectly possible that the head remained alive and bit Peng's hand," he said.
"By the time a snake has lost its head, it's effectively dead as basic body functions have ceased, but there is still some reflexive action."
"It means snakes have the capability of biting and injecting venom even after the head has been severed."
Indochinese spitting cobras are indigenous Southeast Asia, including Thailand, Cambodia, Vietnam, Laos and Burma.
Their flesh is a much sought after delicacy and the skin is used to make expensive designer goods, a trade which has no doubt contributed to their "vulnerable" conservation status.
Snake meat is really good for us. It is not so easy to get and is expensive but it has spectacular health benefits

I've seen this once, although it wasn't 20 minutes later. We were out camping and spotted a rattlesnake so my neighbor blew it to bits with a shotgun. 10 minutes later it would still jerk its head and bite

On a more serious note, I'm pretty amazed that the snake was able to bite so late after getting the head lobbed off. You'd think the oxygen needed in the blood to drive the muscles and so forth would be gone by then, even if reflexes and nerves were intact to trigger it.

I know but better to be safe than sorry. The chances of something like this happening aren't high, but it's safer if we try to be a bit more careful going about preparing such things as snakes for dinner.
If anyone remembers watching the early series of Ultimate Survival, Bear Grylls always said to bury the snake's head after killing it - you can get "bitten" by just stepping on it.

It's also weird how the muscles still spasm and the body contracts long after the head has been removed

That's why the rule in survival is if you have to kill a snake, at least bury its head or something. That bastard can still bite the piss out of you even after hes dead. Really shitty that it happened to be a cobra in this case.
I understand the whole "survival" thing doesn't work given the setting, but at least consider putting the snake's head in a container or something.

I still have no idea how it reacts to the snake head biting itself. I mean I get muscle spasms but there isn't anything telling the body what to do so how does it react so differently (hell, at all) when it bites the body?

As I kid I was taught that snake's muscles can automaticly start twitching and contracting upon their death, regardless if they are still conscious or not. Because of that there is a very real risk of still getting bit by a dead one, as likely happened in the article.

This is quite incredible, I honestly never would've thought a decapitated Snake head can be this dangerous. I knew about headless chickens still being able to run around and (try to) eat, but Snake heads biting ? That's on a whole new level.
This is some crazy stuff and I've seen chicken running around without their heads in my backyard.
