Celiac here.
I was diagnosed with celiac disease at 19 years of age. I fucking CRAVE mickey Ds KFC and all that other fast food shit so bad sometimes. ultimately it affected me career wise so alot of my future plans went right out the door when I was diagnosed.
it really, REALLY, really sucks. worst part is when you tell someone and they tell you chicken tendies be overrated and all that shit and I gotta tellm'.

I had this gluten free cake at my Grandmas 80th birthday last month, she has celiacs disease.
It was delicious, made from a local bakery that specializes in gluten free deserts
I think the issue with gluten free is that people don't really understand that replacing spaghetti noodles for example with anus-strips made of rice and corn doesn't actually work
like there are plenty of gluten free food that is amazing when they don't try to make dumb compromises
but you can't just expect to make a wheatbread sandwiches without the wheat, you know?

I sort of understand ya, my girlfriend's younger sister has Celiac AND Type I Diabetes.
I don't even know how she lives, she must just eat a mix of like grass and sawdust.

The issue is people who are not gluten free are having gluten free food cause they think its hip, cool, and healthy
And it makes everyone working in a cafe or restaurant pissed off

my mom's got celiacs, is lactose intolerant, allergic to half of everything else, so its an adventure every time we have a family gathering because my relative clearly don't give enough of a damn to make more than like, one serving of a single dish with it in mind

I'd like to think trendsters were the reason the gluten free market boomed just enough that we started getting better tasting foods. I remember my mom trying to give us gluten free junk when she first started on it and it was all rock hard trash bread, now it's not uncommon that stuff is close if not hard to discern from the real deal
