I feel like Gordon kind of missed the point of speed. 12 minutes is certainly blazing fast by restaurant standards, but on a half-hour lunch break, that leaves you with 18 minutes to eat and clean up the dishes (and he used several). I don't care how good the food is, if you've got to eat it in under 18 minutes you're not going to be able to enjoy it.
If you really want them to eat better, teach them a meal they can cook in one vessel, in five minutes. Something like my shrimp and mung bean recipe - which is basically "toss the shrimp and mung bean sprouts into a wok, or a frying pan if that's all you've got, drench them in soy sauce and fry them up". Takes about four minutes to cook, tastes pretty good, uses very few ingredients and makes almost no mess to clean up. Probably not as good as what Gordon cooked up, but there's a way better chance of it actually getting eaten.
I'd say eggs and tomatoes. Ten minute meal, rice is the main thing, they could buy a fast rice cooker though. Eggs and tomatoes you say? What a joke, this isn't breakfast. But actually it's one of the nicest dishes if you cook it right, it's a popular Chinese dish. It's all about the method. I eat it often cause I'm poor.
[B]Ingredients[/B] For one serve.
Half a cup of rice.
Two good sized tomatoes and three eggs.
Teaspoon of salt.
Teaspoon of sugar
Formula is eggs in tomatoes plus one egg.
Tablespoon of sugar/salt per 2-3 tomatoes.
[B]Method[/B]
Start rice.
Whisk roughly and throw the eggs in a pot, cook until almost cooked, take out.
Put in the tomatoes cut up on med-high, cover. Cook for 3 minutes till soft.
Mash tomatoes, salt, sugar and egg together, cook for one more minute.
Serve with rice.
Add whatever you want to it, depending on budget I often add chicken, spring onions, onion, peanuts, green peppers, whatever.

Another one is a dead simple noodle dish. Not as healthy.
Noodles
Chinese black vinegar. 1tbsp
Light soy sauce. 1tbsp
Chili oil. 1tbsp
Spring onion.
This is the barebones version of biangbiang noodles which I cook sometimes. My noodles were handmade but you can buy premade ones and boil them.
