I doubt it is staged, more along the exaggerated lines.
im sure they re-film certain sections and film out of order but you can tell certain parts are "live"
i watched one the other day about a restaurant being run inside this guy's restaurant
they're pretty good, way better than this restaurant stakeout competition show
