It's scripted, I've been to an airshow that had a routine like this one.
It goes something like a farmer is having his first flight.
It actually takes a very skilled pilot to fly that way and not lose control.

I saw one where it was a 2 seater biplane where the pilot "didn't know what he was doing" He did a loop and the guy in the back fell out, conveniently with a parachute.
