But most pranks can backfire easily. Even then nothing that bad could have happened either, he would just stop pretending to be unconscious and tell him everything is okay. It's not like the passenger would throw him out of the plane and try and land it himself.

Pretty sure that the pilot's wheel and rudders override the copilots, so even if he hopped in the passenger seat the pilot could have retaken control.
Besides that, planes are actually pretty easy to keep in the air once you've taken off, provided he doesn't run out of fuel before the pilot wakes up.

On my first helicopter flying lesson the instructor said nice and calmly "Right, I'm just going to simulate an engine failure" and the engine stopped running and we proceeded to fall out the sky and I had a similar reaction.

From what I remember, yes. It was the idea that when falling, the rotor will start spinning from the upward airflow and make it possible to glide the helicopter down (probably still into a fatal crash but much less severe than just plummeting)

Yeah, it's called autorotation.
It scared the shit out of me when I took lessons, only I was given fair warning beforehand. It made me dread my next lesson for a looong time.
