I would imagine that for at least some vegans, it's more about the moral principle than an attempt to get people to stop eating meat.

This is an extreme example, but it's like saying "I dunno why you'd be nice to people when someone else is going to be a dick anyways". Yeah, someone else is going to eat the meat, but it's a personal choice of theirs and they at least feel like they aren't adding to what they think is the problem, if that makes sense?
I ain't even vegan, but I can understand where they're coming from, even though they literally make 0 difference in the amount of animals killed and eaten.

The whole "it'll go to waste otherwise" or "someone else would eat it" aren't really good arguments, unless there's some way to explicitly say so, you just show up as another consumer. That +1 can mean an extra shipment of meat to a store, which ends up higher on the chain as another head of cattle on a farm(rounded up to an even figure usually)
Whenever you pay for meat, you're making a vote for making more meat

I know two vegans and they both do it for health reasons rather than love for animals.

Veganism is a tad silly in the sense that we humans are omnivores. So it's either eating some animal products or taking supplements.
But lots of small animals get decimated by harvesters anyways, so there's a tad bit of futility there too.
I actually wonder what the results so far have been with people being vegan. Like has it actually lowered meat production or anything like it?
The only thing i am aware of that they did manage was the creation of hip and cool "eco/bio" supermarkets that sell all sorts of bio products for 3x the regular price.

Maybe the someone else would eat it argument, but you're completely misunderstanding the "it'll go to waste otherwise" argument. They're not saying if you don't buy it, they're saying if you inadvertently buy it. You can't avoid just showing up as another consumer, if you throw it away it's already been paid for, for example in this guy's tragic pizza trauma. So no, it's a pretty logical thing to say. If you've ordered food and realize later it doesn't meet your moral diet throwing away the food doesn't help your cause because they've already made their money, they don't even know you threw it away, plus you're encouraging food waste.
I just don't understand why you'd be against something that's hard-coded in our brain? We literally have K9 teeth for nothing but eating meat. It just doesn't make sense to me considering other animals eat other animals. "Oh yeah but they don't have a choice." we'll the only reason we do is because you can take supplements to replace the vitamins and shit you need and normally get from meat. Like that would be like going without sex for the rest of your life because you think it's unnatural, even though it is and we need to do it to survive.
