If you are wondering how exactly they do this then it's two things: 1. The iPhone is relatively powerful for its size. It's quite a strong little thing, one of the few objects that apple actually delivers in when looked at from a price/performance angle. 2. Ridiculous amounts of optimization (And not just optimization, they program directly to the chip, just like consoles.) and loads of baked lighting. They had to cut corners somewhere so I'm assuming this is a fairly linear game with loads of 'enclosures'. The iPhone cannot handle a fully 3d open world game at that detail.
