Pure instinct. The deer wants to protect it's child, and see's the dog as a wolf. Which is why it doesn't attack the cat to begin with, it doesn't see it as a direct threat, but rather a minor annoyance.

Don't turn this into a cats VS dogs thread. I've been bitten by dogs on several occasions, and also have had my cats eaten by dogs. You don't see me prancing around laughing at dogs getting hurt because of this, do you? In the end, I appreciate both dogs and cats.

This is comparable to why dogs randomly attacks cats/squirrels/other small creatures, in the eyes of the dog, these animals are food.
And in the eyes of the deer, the dog is a wolf, AKA. an immediate threat to the fawn.
