I don't get it. Why do people in the future need to send people back in time in order to kill them, when there's far less complicated means to do so? Is that explained?

30 years in the past, the target is a nobody. plus no body in their present time, no DNA evidence left behind.
If the future self kills the past self, it's suicide.

How much do you want to bet there's going to be one conversation between Gordon-Levitt and Willis along the lines of: "Oh man, I'm completely bald in the future?" Followed by a sour look from Bruce Willis.
