Not that impressive really, he has a process, takes tray to side and tips off plates, chucks plates in bucket behind him. Anyone could do this at this speed with a little practice.
His response to being paid per piece.
At first I was like, "well it looks like he throws out the contents of the bowl, then throws the bowl onto the ground"... then I was like "oh, he throws out the contents of the bowl, then throws the bowl into a big red bucket"
..still not really impressed
In the end he said that sometimes there are fishbones in the leftovers and it hurts.
That's pretty loud, not good for your ears.

I worked as a busser and I could clear a table pretty fast, probably at a similar rate to this guy. When I would put wine glasses in the rack I would go a lot slower because wine glasses break really easy and when they're not supposed to.
I'm also a busser and I'm really not impressed by this. All he's doing is just dumping the trash onto a pallet so he can wipe it down later. Lemme see him do this at a restaurant, then I'll be impressed.
