this would be a great way for Disney to adopt VR. it's probably never gonna happen cause disney or any company really never consults people outside their company for their attractions but it's a swell idea.

I've never grown up with any of these rides, but i've seen videos of them and I would be dying to see them in a high quality VR experience. The idea of even scanning areas of previous rides would even make for a great opportunity to dive more into the history of the park's past, which in turn would probably have people more invested into the park.
OH MAN! This looks great! I remember riding 20,000 Leagues Under The Sea a long-ass time ago. It would be fun to revisit it!

Hopefully Universal follows this with Back to the Future: The Ride
This would be a fantastic way of having the rides at home, even if you can't 100% emulate those 4D experiences.
