Pretty unprofessional of him to not blur the license plate numbers. That's like, literally basics of filming with vehicles 101.
He never blurs license plate numbers. Why would he? If you drive through a city, you'll see hundreds of license plates
It's a courtesy thing more than anything else. It used to be, and in some places still is, that you could easily track people down with license plate numbers with very little effort. It's not so easy to get that info anymore, a good many countries don't divulge those records to the public anymore, but people are naturally very, very protective of their identifying numbers of various kinds. It's not quite like saying that since I can probably see your credit card or drivers license if you get your wallet out then I should be able to film them unblurred, but in the minds of common people it is exactly like that. It's something that identifies them and it's a very, very common practice to blur them out of courtesy and professionalism.
Fun fact, this car used to come with a trim model that had a built in refrigerator in the center console.
