Driving a 2005 berlingo and this has occured on 2 occasions. After about 30 minutes of driving the center display suddenly goes like this. It still seems to sort of work. I came back to the car 6 hours later and it was fixed. The same thing happened about 3 days before, and it hasn't happened since or ever before in our 4-5 years of ownership

Bad connectivity in electricity that sometimes works, sometimes don't. Probably environmental effects like humidity and temperature plays a role in this too.
You say after driving for 30 min this happens, which might be hot temperature, that causes also more humidity (wet tires and insides + hot temp makes water evaporate), that messes up with circuit.
Also do you have any modifications in car electronics, such as different car radio? Other reason might be weird wiring causing power surges again messing with this display.
Yeah I have an aftermarket radio, though it's been installed for like 3-4 years and we've never had this happen before.
The only think I've been doing different is having my phone in a holder there above that display. the holder visible in the picture. Though I doubt that'd be the cause.
Heat or even vibration can be causing it. Lead free solder is more brittle than leaded, this causes problems with things that expand/contract with heat cycles (like the sun heating up your dash) or vibrate. In my old car, I had the gear selector LCD break a connection in the gauge cluster, had to remove it and resolder a part of the ribbon cable back onto the board.
LCD screens do fail due to a variety of reasons after a good few years. It's usually a bad connector on a ribbon cable, not as often the natural death of the LCD. LCD manufacturers for TV's often claim their TV's last for 100,000 hours at best at 77 degrees F and other ideal conditions. You can assume that a car is far from the ideal condition for an LCD screen, due to vibration, heat, etc. But more often than not, the LCD is probably still good unless the car has been pretty abused and isn't like 14+ years old. So it's likely that over time something relating to the LCD, most usually a cheaped out ribbon cable and especially if the ribbon cable is soldered in place, is the culprit. Audi's from <2010 are the most notorious for this one, as their LCD screen in the dash is prone to failing due to a bad ribbon cable, mine only worked in the winter until I pulled the entire thing out and resoldered the connection. The LCD its self can and does fail, though it's not as common and usually takes a good many years.

And that's not even the worst of it, sometimes it just straight up flips backwards. All I can say is automotive electronics are fucking awful.
