Flying is perfectly suited to VR, reguardless if it's casual flying or hardcore flight simulation. The Games X-Plane 11 Currently in beta, VR in X-Plane 11 is the best option for realistic flight simulation, VR interaction is fully supported including flying the aircraft with the yoke / stick, a number of free and payware aircraft are also beginning to include support for flying in VR, free movement (teleportation) is also allowed both inside and outside the aircraft, XP11 can be played on the oculus rift, vive and WMR headsets. Performance requirements are fairly demanding, at least a GTX 970 and a reasonably high end CPU is recommended to achieve medium settings with a playable FPS, X-Plane has the most detailed and complete free global scenery, excellent flight dynamics and pretty good graphics. Prepar3d P3D is a realistic flight simulator like X-Plane, unfortunately the VR implementation is currently a bit lacking, particularly in cockpit interaction, integration of 2D windows and performance, it's still a decent choice with a wide range of payware addons. FlyInside A non-free plugin that adds VR support to Microsoft Flight Simulator X, Prepar3d and X-Plane, practically obsolete now for X-Plane, it still has some benfits for P3D, for FSX it's the only real option. DCS World Playable in VR but there is limited interaction supported, still if you have the physical hardware it can be a very good experience, performance is quite decent as well, although you may have trouble spotting distant targets, DCS World includes two free aircraft you can fly so there is no excuse not to try it. VTOL VR Currently in early access this is a built for VR combat flight simulator, the aircraft and weapon simulation is fairly realistic and as you'd expect requires no external hardware, graphics are fairly average but it's still an excellent game. War Thunder A semi-realistic combat flight simulator with MMO aspects, Has basic VR support, a bit of a mixed bag in my opinion but it's free so no harm in trying it. I've probably missed quite a few so let me know if you find something that should be here, I'd add pictures but thumbnail support seem to be missing.
Elite Dangerous if we're counting space sims, I guess?

Anything more on the Ace Combat rather then hyperrealistic simulation side?
I can't see anything other than VTOL VR that comes even close to Ace Combat.
I'll keep looking and report back. WORLDS AT WAR on Steam -I found this which looks exactly what I am looking for, I just don't know if I can run it. Thank god for the ability to refund games now.
Is that a Starcraft Terran Battlecruiser in there?
It looks like its "Influenced" by that design but otherwise no, too detailed. Alas, don't have the coin to grab it right now

VTOL VR is a blast. I brought my VR rig into work a few weeks ago, and it was the star attraction(i work with a bunch of aviators). I dropped a pilot in without any instruction and he picked it up like a champ. Everyone tried to air refuel, which every time resulted in frustration and a shot down tanker.
There's Ultrawings (also available on Oculus Store) which is more of a casual, open-world flight game with lots of missions and challenges to complete. There's an option to switch from arcade controls to more realistic ones.

Worlds at War I refunded my copy though, because it does not support motion controllers. It's designed for joysticks, but if your going in expecting to tap buttons on your VR jet then you will be very disappointed.
VTOL VR was the game that really sold me on VR as something I would use on a regular basis.
Elite Dangerous in VR actually makes the game fun. Would recommend if you own it already, but probably not worth buying because tbh the game is pretty much the uncanny valley of video games.
