Which Server Specs are better? Dual CPU any advantage?

Hello i'm about to rent a Rack-Server.

I want to run some smaller not very ressource eating stuff + a Rust Server.

The Server has 2 CPUs but I think it would not be matter how much CPUs it has right? I think Unity can just use 2 Cores am I right?

So would it be better to rent a server with:

2x Xeon E5620 (2x 4x 2.4GHz + HT) + 48GB DDR3 ECC RAM?

or

1x Intel Xeon E3-1220v6 (4x 3.00 - 3.50GHz) + 32GB DDR4 ECC RAM?

I am totally not a hardware guy, so forgive me to be a noob
