you need to zoom in a lot, the FOV is far too large

Step one to proper gmod screenshots is an understanding of camera FoV. I can't really point you to any tutorials on this as I pretty much taught myself. Generally just zoom in more than you think you need to and experiment with what works and what doesn't
You've made a solid start, though.
welcome aboard, these are a good start, you've got the attention to not spare details which is great. As for suggestions - you should try using the poster console command to get more quality out of your scenes: instead of using the camera weapon, type poster 1 (or poster 2 for a bigger size picture, etc), your picture will then be in garrysmod/garrysmod/screenshots

I actually did a few little examples a while ago for LW. This might help
So here I'm going for a full-body shot just for the example. This one isn't at the full 90 fov, it's zoomed a tad to fit the guy but it's still a fair example. The background is distracting as hell, there's too much to look at.

The trick is to move your camera source much further back, and then zoom to fit the same shot. You can use the camera weapon but I recommend getting advanced cameras as your settings carry over saves

Correct FOV's make or break a scene, it's important to familiarize yourself with it.
Oh and not every scene requires a tighter fov. General rule is for more open environmental scenes leave it wider (though still not the default. You want to avoid screen warping that comes with larger numbers) and for more focused scenes, like characters talking or something like that, you'll want to close it in to minimize any distraction from secondary elements i.e. background stuff or things that aren't vital to the scene.

I very much like the first one. You should redo it with a better zoom like the others are suggesting.
