My overall favorite controller is the DualShock 3, for reasons I'm not really sure I can rationalize. But I love my Steam Controller too. It really has a niche, but its software is absolutely incredible. There's nothing about it that they don't let you mess with.
I have yet to touch any of the new generation controllers (Hoping to get a PS4 soon,) So I'll just say the 360. I remember liking the feel of that over the PS3's.
I love the haptic feedback on the Steam controller as well as its mouse emulation for my htpc
DualShock 4 is my favourite. The light bar is a gimmick 90% of the time, but it does serve a purpose for controller tracking in PSVR games (if you aren’t using the PS Aim or Move controllers). The speaker in the controller can also be useful, especially in racing games where you have a spotter, engineer or co-pilot and you can have their radio chatter sent through just the controller. Speaking of racing games, the DS4 also has an accelerometer, so you can physically turn the controller to steer a vehicle in a game. And it’s actually incredibly precise and responsive. The touchpad is also useful if a game can be bothered to implement it properly.
Why list DualShock 1 and 2? I could get having the 3 separate because motion control and wireless, but all the 2 has over the 1 is those funky pressure sensitive buttons that like 5 games used.

The 360 controller had the perfect button layout, size, weight and build quality (unless you accidentally got one of the sneaky china knock-offs which break if you so much as sneeze on them) for me. Not sure I'll ever find a better controller suiting my tastes and needs.
I think the Xbox 360 controller is the best all-round controller (I actually prefer it to the Xbox One controller), but the Gamecube one is pretty nice too. Those squishy triggers were nice and the weird button layout with the big A button actually worked well for things like platformers. The Switch Pro Controller is damn nice as well, although the triggers aren't that great and the buttons are maybe a bit too chunky.
Does the keyboard/mouse count as a controller? (I voted 360 btw)
No, because if I listed it, everybody would just choose that.
KB and mouse isn't specifically designed around gaming, I never found it to be that good to be honest. The mouse is superior for accuracy for obvious reasons, though, by far. one of the biggest things I did was 'controller + mouse', best combo. Because the joycons one handed it basically allows this perfectly tbh.
If they'd fix the shitty D-Pad on the Switch Pro Controller (I think they did in the Xenoblade version of it, but good luck finding that for a reasonable price) it would definitely be my favorite. Until then, for 3D games my favorite is the Xbox 360 controller and for 2D games my favorite is the Saturn controller.

It's great to just rest on your lap, it's really wide so you don't grip it too tight, the start/select buttons are awkwardly placed, but the rest of it is really nice.
The second gen Xbox One controllers are pretty nice. The rechargeable pack you can get is great as well, only has to be charged once a week or so.
SC by far, I just wish they'd make a second, more ergonomic one with more clickable paddles and touchpads and less awkwardly positioned thumbstick/face buttons.
I love the SC but it's got problems. I have a really hard time going back to it because the analog stick is so tiny, as well as the face buttons. You're right about the touchpads, too. They have too much travel and require too much force to actuate, and worst of all, they're LOUD to click. I worry that it won't get a hardware revision due to lack of sales of the first generation.
DS4 by far. Especially since the V2 or whatever allows you to actually get audio through the DS4 (audio-jack in the controller) when it's connected to your PC.
The 360 controller is the best, followed closely by the DS4 and Xbone controllers. They lose out because they both have worse triggers than the 360 controller. The Switch Pro Controller is pretty good but the very wide buttons feel weird, especially since the joycon buttons are so small. I've never liked the steam controller, it just seems like a bad compromise between a mouse and a normal controller. I can't stand touch pads so they're not a positive feature for me. If I'm playing a mouse and keyboard centric game I'll just use a mouse and keyboard. Though the custom controller stuff steam is doing is pretty great so you can use almost any controller you want these days.
Despite not really being interested in the Xbox One itself I have absolutely fallen in love with the controller for PC games. It fits so comfortably in my hands, which a lot of controllers can't do given how large my hands are, and the buttons are all in convenient and comfortable places. The texture on the back of the controller is really nice too, being just rough enough to feel good. I see a lot of people saying DS4 and while I agree it's also a very well-made controller it simply doesn't fit my hands very well.
Steam Controller, by far - the versatility it provides is unlike anything else, & the analog triggers and the grip buttons on top of that really make it into something that has everything, at least for me
Only used dualshock 2,3 and 4 and they all felt the same to be really honest, controllers don't give me the same satisfaction that kb and mouse does and trying to move the camera in any game is such a mess.
The 360 controller was great for all games bar fighting games, the placement of the sticks made for all kinds of room for input error. FPS games were spot on though, I feel the PS4 controller lacks that kind of aesthetic.
I'm all for the Xbone controller, it's really comfortable and feels sturdy as fuck. The knurling on the thumbsticks and the clickyness of the D-pad is real nice too, giving it an edge over the also-excellent 360-controller. That, and the lack of a big, fat, sticky-outy batterypack on the backside, which was my main complaint with the 360.
Ever since I got the XB1 controller with the Oculus Rift, it quickly became my favorite controller. Shame it self-destructed yesterday, the L1 just broke off
Joy-Cons would be number 1 if using them on PC didn't require running three fucking programs simultaneously to make the Joy-Con inputs recognised by the PC, then converted to a vJoy device, then converted to an emulated Xbox 360 controller on a game by game basis. And also if the gyro actually worked properly instead of being so sensitive that it spazzes out from the slightest movement. Gyro aiming in BotW is completely unusable because it turns Link into Michael J. Fox unless you put the Joy-Cons down on the table and don't touch them. If those two things got fixed, it'd easily dethrone the DS4.
360 pad has been my love. I've been using a DS4 a lot lately though and it's also pretty great. Never used a XB1 controller though, but I'd assume it's also pretty good.
I love the 360 controller for hot seat multiplayer and driving games But Thrustmaster T. Flight Hotas X is my favorite for sims.
Xbone controller, though I prefer the DualShock 4 for games that are better with a DPad. The six-button Sega Genesis controller is pretty great too and it's what I use to play most games on my Retro Trio. It might be sacrilege to use a Sega pad for NES and SNES games but that DPad is god tier.
