Best way to restore my hard drives? 7 Drives 16 Partitions.

Hey, long story short - Currently I installed OS on new M2 SSD while having all other drives disconnected, so should be no hidden partitions/dependencies installed on other drives.
I want to nuke all my drives and have them fresh ready to use - while keeping one for backups.
So:
[All Drives] -> (Data Safely moved to This one) -> One drive that's safe from other operations.
I am not sure how to manage this, I tried deleting partition-by-partition but it keeps telling me there is OS installed on it (even though it's an OS from 2 years ago).
Setup is:
3x SSD's via SATA.
2x HDD's via SATA.
1x SSD via M2 (OS Drive)
1x HDD via USB.
Right now - it looks like lumberjack chopped wood tbh:

Disk 5 is my main OS/M2 drive, that doesnt need to be touched.
Everything else can go (But one has to be dedicated to backup from others - then once others are nuked - I will restore backups and nuke that one that was used for backups).
What software could I use for this?
