From instinct I usually call it a sauce if it's a mixture of two or more ingredients, however the definition of it basically says that if it's a liquid and it's served as a condiment or as added flavor to food then it's a sauce.
So I guess you could call them both sauces, but then everyone will look at you weird and ask you why you aren't calling them "honey" and "syrup"

Maple syrup is not a sauce, it's a syrup. If I was to add it to mayonnaise or chicken stock, that would become a sauce.

My preference is that they not be called sauces because no one intended for these things to all fall into nice categories. It's more fun when it's weird.
Furthermore, "sauce" seems to be used most often when you literally have to say sauce or else it's not the same thing.
-Apple. Applesauce.
-Pasta. Pasta sauce.
You don't take honey and syrup and use them to make honey sauce and syrup sauce.
I think I would describe them more as a glaze
