Why do all the main characters in these Disney-made Star Wars shows always look like neon-coated anime OCs?
Like you have Oscar Isaac over there looking like a dude in his mid-30's wearing a bomber jacket and fatigues, and then the main cast rolls in and they've all got purple hair and teal makeup and lime-green flight suits and they all look to be about twelve.
Like I know we gotta color-code things so the kids know which toy to ask for, but couldn't they make it a little more in-line with what Star Wars actually looks like? Kids can detect fakeness really well, and that's why you can go down to target and find 50 Admiral Holdo action figures collecting dust in the clearance bin while all the Stormtroopers and legacy characters are sold out.
It looks like they tried to take the Avatar art style and make it 3D. Badly.

It's like they took RWBY and somehow made it look cheaper than it is
It is the base style of a shit ton of CN network off-buys they play around the holidays when no one is actually at the network, because it's literally the default tweening and morph style of at least two different packages I can think of.
I think the non-organic stuff looks really good, but I really don't care for the way the characters look in the way their expressions move and overall look. I think it's mainly that they don't feel consistent with the style of the non-organic stuff. I think it's a lack of facial texture that somewhat takes away from it. Though I feel like less than a minute of it probably isn't enough to judge.

I can tell this looks 'cheap' but I don't know enough about animation to put my finger on what's annoying me about the way it's all animated - can someone explain it?
Couldn't they just keep with the style they had in The Clone Wars? It wasnt the best, but its was a million times better than whatever this is

IIRC TCW was really expensive to make, and that was with it being self-funded by Lucas himself. I imagine Disney's probably got them on a tighter budget.

Consider this;
At it's height Clone Wars episodes had a cost of at a minimum to a million or more dollars, there isn't an exact number but we know a lot of the episodes were a pretty penny along side Lucas' personal funds into the show itself. Noting the quality from season 3 onwards you could take several of the 4-Part arcs and release them as films, hell that's what they did during Star Wars celebrations.
Combined with The Mouse getting to control certain aspects of the show, the themes, and budget; you're gonna end up with something that is going to be made with a lot less resources intended for it. Dave might have a controlling hand seeing as he's Lucas Film's Animation Lead, but there are some things he's not able to do. Him getting TCW back is pretty great but you can notice there's a subtle dip in the general quality of it, probably because they're using assets they had from Rebels like Fort Anaxes.
Actually the Fort Anaxes assets in Rebels were reused from Clone Wars.
I'll be more interested if they make a show about Imperials, which they likely never will

Dude, the other day they posted a picture on twitter of their 'brand new render farm' which was like, $30 000 of brand new graphics cards that aren't even the ones meant for rendering.
Given how fucking terrible everything they've ever rendered looks, why in the fuck are they doing this crap
because it makes them money
There's no way in hell RWBY needs a rendering farm of that fucking caliber.
