So my job contains sporadic and unpredictable rushes of work that takes a varying amount of time to complete, but has a lot of downtime between those times, so maybe we could compile a bunch of laptop games for people in a similar situation?
So these would be games that you can pause without consequence, so games like Dwarf Fortress, but not Dark Souls or Monster Hunter or Terraria for example. Maybe even stuff with a short time investment for payoff, so more like For Honor Duels vs AI than a Stellaris Grand Campaign, though that has its own charm at work.
Ideas?

Pretty much any roguelike. Caves of Qud, TOMe, ADOM, etcetera
Get a Switch.
I read books at home, when I have time to be immersed, and not be pulled away randomly.
Have you looked into a gameboy micro?
smaller than a gameboy but plays gameboy games
Caves of Qud and Hotline Miami are two really good ones that come to mind.

PIxel Dungeon is a roguelike Android game with a bit of a learning curve, I picked it up about five years ago and still play it. There are 'modded' versions available as standalone apps as well; I've been playing Shattered Pixel Dungeon.
Rimworld is for PC and seems like it'd fit the bill as well.
Clustertruck and Superflight are lightweight games you can pick up & drop
Risk of Rain is another well-made roguelike
