I thought the general consensus was that the despicable me movies themselves were fine, it's just the over the top marketing of minions that left a bad taste in everyone's mouth

Lots of good movies get over the top marketing. Look at Frozen. I don't hate the Minions because they're overly marketed, I hate them because they're fucking annoying and horrible.

The only way they could sell me a Shrek reboot if it is closer to the books than it is to the original series of movies. You just can't replicate the magic (however aged it may be) of the first two movies, so instead try readapting the book in a more faithful manner whilst expanding what is already present, with a new voice cast to emphasize this shift.
I'd rather a Shrek "remake" than a Shrek reboot. Mike Myers is too iconic of a voice to just "reboot." A self-aware Shrek can be done right and done really well.

Shrek worked perfectly because it was a pastiche of sappy fantasy movies that appealed to all ages with just-barely-adult humor mixed in with slapstick and genuinely clever cultural references. I wouldn't trust the Despicable Me guy with writing a Shrek spinoff cartoon, let alone a feature-length movie. The reason the first one was great was because the team developing it were almost being punished by being sent to work on it, so there was comparatively little meddling on it and everyone got to fuck around far more than one would expect.
