So what she does is dips something into the mold to scoop it out. Not only is she never going to get all of it, and not only is she pushing mold deeper into the jam that way, but if you can see mold on something, it's got mold way underneath and almost everywhere you can't see.

I fail to see how that would be an issue. The US doesn't have universal healthcare so it's not like I'd be paying for it. They can die in extreme poverty from medical bills just to own the libs, more power to them.

This is still a common thing. Personally I toss anything with mold on it but I'm kind of surprised at the reaction to her comment given how common this practice apparently is in Britain.

Admittedly I do this with bread if it's just a single dot of mold, but not with anything else, or if it's a lot of mold (roughly dime size or more). I guess that's hypocritical and weird and I probly shouldn't since everyone here says there's invisible mold everywhere else which is something I've thought about before but I never got sick from doing it so I never thought about it too deeply.
I used to do this with bread for a couple decades, my mother taught me it. It's probably something passed down from depression era years. I have a pretty strong immune system due to poor living conditions so I could probably still get away with it, but I tempt fate enough just by living so if I see any mold at all I toss it.

Food safety guidelines are always geared towards minimization of risk, even in cases where risk is low to begin with.
Realistically, are you going to get sick from scraping a bit of mold off the top of jam? Almost certainly not. Aerobic mold only grows on the surface, and spores typically don't penetrate far into the food. But the guideline to toss it exists because there's no good way to quantify how much is a 'bit', and if you're removing a solid half inch of fuzz you will get violently ill from mycotoxins saturating the remainder.
So you'll see a lot of sources say something along the lines of 'technically, you should get rid of it, but use your judgment'. If you elect not to toss it, you're taking a calculated risk. I prefer to err on the side of caution, because a $3 jar of jam isn't worth even a small risk of getting sick IMO.
If good cheese has molded a little I will cut about half an inch back from the spot, I don't waste cheese. Haven't had to do that with dried meat since it never lasts long enough in my house to collect mold.

Some hard-cheeses are 100% fine to slice past the mold because of its physical structure.. FDA says the 1/1.5 inch rule is OK for other soft cheeses.
Hell some cuts of meats are cured with the expectation of mold growth that is simply sliced off when it's prepared for consumption.
