Every year, the town of St. George in South Carolina celebrates the World Grits Festival, a three-day festival that celebrates all things grits (a food made from a dish of boiled cornmeal). The crown jewel of the festival is the Rolling in the Grits contest, where contestants dive into a grits-filled pool and collect as much grits as they can in 10 seconds. But what is it like to compete? Our Gastro Obscura foods editor, Sam O’Brien made a trip to South Carolina to find out.
