The breast plate armor can be worn with most shirts and the red jacket, that fills your 6 slots.
But when I use a snow jacket I can't use a poncho at the same time, so one space is always free when wearing a snow jacket, am I right?

Yes plate works with shirts and red jacket only afaik.
The vagabond jacket follows the same rules as plate i think...
there are several categories of apparel:
1) Feet
2) Legs
3) Hands
4) Chest ( Under shirt )
5) Chest ( Over-Shirt such as Pancho, Armor, Vagabond Jacket and more )
6) Head ( Armor, Hats, Headlamps etc )
